La Tapa, The King of Snacks
The incredibly civilised custom of the tapa dates back to the 13th Century, when King Alfonso X, known as El Sabio (The Wise) introduced it.
The Wise was well aware of the effects of alcohol on an empty stomach and decreed that no wine should be served without food. Tavern owners started serving small portions of cheese, ham or chorizo. The plate would be placed on top of the glass or carafe to tapar (cover it) hence el tapa.
